Acrobat XI does no longer have that limitation, and will work better for larger text edits, but Acrobat 10 and earlier were not able to do reflow.
However, this will not reflow your text, so if you remove a large piece of a line, the layout will suffer. To correct typos, you can do that by selecting "Tools>Advanced Editing>TouchUp Text Tool" then you just click on where you want to edit, select what you want to remove and delete the content. You would still need Acrobat to create the PDF file, so it was not a wasted expense.
PDF is what I like to call a "final file format" - it is not the best format to make big edits in a document, you make those edits in an application, and then re-create the PDF file.
To erase people from the org chart, you very likely will have to go back to the original application that was used to create the document (MS Word, Frame, Visio. Once you've removed them or covered them up, you would add new ones with "Document>Header & Footer>Add", you may want to try to modify the headers and footers first to see if the page numbers were added that way, but because you say you purchases Acrobat for this task, I assume that the original author did not have access to Acrobat, so chances are that this feature did not get used to add the page numbers. To change page numbers, you would first have to remove the old page numbers - as far as the PDF file is concerned, your page numbers are very likely not marked in a way that it "knows" what a page number is (that depends on how the file was generated). If you are not dealing with document security, then removing pages is not a problem: Open the document and then open up the Pages navigation pane (View>Navigation Panels>Pages), then you right-click on a page that you want to remove and select "Delete Pages". You are posting new questions, which means that the history of this quesiton is lost (or at least not obvious).
